Berry Friands

Today I tried a new recipe, and made some berry friands. If you don’t know what they are, here’s a link  that explains it http://en.wikipedia.org/wiki/Friand. Basically they’re similar to muffins, only that you use almond flour and egg whites.

For making these you need:

200g Butter
60g regular flour
160g very fine sugar
120g almond flour
5 egg whites
Lemon zest from 1 Lemon
and a bunch of berries
 

Firstly I pre-heated the oven to 180º C (356º F ) and prepared 12 muffin forms.

Since I didn’t have any almond flour, I used almond slivers and ground them into flour.

In a pot, I let the butter melt on low heat. While it was melting I put the flour, the sugar and the almond flour in a bowl and mixed it all well. Once the butter was melted I added it to the flour mixture stirring it all.

Then I added the lightly whisked egg whites, and the lemon zest stirring it well. After that, I put the mixture into the muffin forms, filing them only half way. On top I added the berries, then put it all into the oven.

After 25 minutes (depending on your oven it might take up to 35 minutes) I took them out, and waited for them to cool down, before my son an I plunged on them, eating two of them each. And they came out really good!
